Red wine Cultivar: Ruby Cabernet
Currant Abbey is an anagram of Ruby Cabernet (that means you can switch the letters to form the word Ruby Cabernet). Ruby Cabernet is a lesser-known cultivar and was first created by crossing Cabernet Sauvignon and Carrignan in California USA. Its character is best described as "the wilder brother of Cabernet Sauvignon."

Style: This lively new style of red wine delivers mouth filling ripe flavours , whilst finishing fruity with just a hint of sweetness. Black currants and pepperdews/sweet peppers create an exciting bouquet, with elegant subtle fruit completing the harmonius sensation of red-wine drinking pleasure. With unusual low tannins this wine is an ideal introduction to red wine enjoyment.
Vinification: This wine was fermented in open tanks for 7 to 12 days, between 26°and 29° C. The fermentation "cap"(skins that float to the top of the wine) was hand-plunged into the heart of the wine several times per day while simultaneously pumping the wine over. The fermented skins were given the gentlest of pressing in a traditional basket press before being selectively blended with the free run wine. The wine was bottled and labeled in October 2005.
